Ingredients
- Cooking Spray
- 1 cup Carrots, 1/4 inch thick slices
- 3/4 cup Onion, chopped
- 4 Garlic Cloves, minced
- 1 cup Celery, 1/4 inch thick slices
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 6 cups Chicken Broth
- 2 cups (3 oz) Egg Noodles, uncooked
- 1 Tbls Soy Sauce, low-sodium
- 1 Bay Leaf
- 2 cups Turkey or Chicken, shredded
- Additional Black Pepper (optional)
Preparation
Step 1
1. Heat a large saucepan over medium-high heat. Coat pan with cooking spray. Add carrot, onion and garlic; saute 5 minutes or until onion is lightly browned. Add celery, salt and 1/4 tsp pepper; saute 3 minutes.
2. Add broth and next 3 ingredients (thorugh bay leaf); bring to a boil. Reduce heat, and simmer 5 mintues. Add shredded turkey or chicken; cook 3 minutes. Discard bay leaf. Sprinkle with black pepper, if desired.
